This is something I came up with when I was making Yoghurt coconut lemon pie. It’s actually made out of pie crust recipe but tastes so good that can be eaten on it’s own. And it’s a delicious pre-workout energy treat!
Ingredients:
- coconut date walnut crust recipe
- peel of 1 lemon
- coconut flakes
Preparation:
- Mix crust recipe with lemon peel.
- Form balls and roll them in coconut flakes.
Love how simple these are! They look wonderful!
And they taste amazing 🙂 Somehow they remind me of baklava that I haven’t had since I’ve been diagnosed with diabetes. I guess I’ve sort of found a healthier alternative…
